Joan Antoni Miró (Almatret, Lleida, 1949) began working in the hospitality world at a very young age as a waiter in a number of establishments. In 1978 he set up shop in Barcelona with Les Truites, which he continues to run, and where he has used the traditional tortilla as a base for new creations, using his powerful imagination and work ethic to create a new world of colors, flavors, scents, and sensations.
